Volans Blanco Tequila
Volans Blanco Tequila is a 40% ABV (80 proof) unaged highland blanco — pure Jesús María agave character with no wood contact, only stainless steel. The signature is the three-water blend: rainwater, +450-foot deep-well water, and spring water each get their own separate blanco distillation, and the three are blended for the final profile. Estate Blue Weber agave grown at ~6,800 feet in iron-rich red soils, cooked ~22 hours in stone-and-brick ovens, rested 24–36 hours, crushed on a 19,000-lb mechanical tahona, open-air fermented with proprietary yeast, double-distilled in copper pot stills, then oxygenated before bottling to round the mouthfeel — certified additive-free. Sweet cooked agave, minerals, floral notes, citrus, black pepper, apple, and pear on the nose; cooked agave, black pepper, citrus, smokiness, and floral notes on the palate; a clean, lingering citrus-and-mineral finish. Available to order online at Del Mesa Liquor, San Diego, CA.

The Three-Water Blanco
Volans' whole identity is in the water — or rather, the three waters. Rain, deep well, and spring each pull different minerals through the same highland agave, and the house distills them separately before blending. The oxygenation step then strips harsh compounds without additives, which is why the blanco drinks rounder than its 80 proof suggests. Browse Volans tequilas or explore blanco tequilas.
