Sotoleros Tavi Lechuguilla Lot 4
A new brand from the infamous co-founder of Clande Sotol, Sotoleros spotlights small regional distillers at viñatas across Chihuahua. Sourcing microbatch distillates of both sotol (Dasylirion) and lechuguilla (Agave) as well as the occasional blend of both – an otherwise lost tradition rarely seen within the commercial category – Sotoleros helps producers to maintain traditional production techniques on an intensely small scale, with releases rarely exceeding 70 bottles.
TASTING NOTES
In several northern Mexican states, the term Lechuguilla has historically been used to describe numerous types of regional agave, as well as the mezcal distilled from them. Produced by 4th generation vinatero Tavi Torres in the small community of Batopilas, Chihuahua, this release from Sotoleros is an example of that tradition.
Made from 100% Agave shrevei, harvested wild at maturity and cooked in an earthen underground oven using oak firewood, then milled by hand using a mallet. The agave ferments in stone vats for 5-8 days, and is finally distilled in stainless steel pots with wooden caps. The final spirit is adjusted to proof with spring water.
