Daou Cabernet Sauvignon is the Paso Robles Cabernet from DAOU Family Estates — 750mL, a full-bodied, Cabernet-dominant Bordeaux-style blend grown in the hills of Paso Robles, California, and aged in French oak, roughly half of it new. It is available to order online at Del Mesa Liquor.

  • ABV: 14.5% (consistent across the bottling's official tech sheets)
  • Size: 750mL
  • Style: Cabernet-dominant Bordeaux-style blend
  • Aging: French oak, roughly half new
  • Origin: Paso Robles, California, USA (DAOU Family Estates)
  • Terroir: High-elevation vineyards (estate at ~2,200 ft) on calcareous clay soils

The Daou Brothers' Paso Robles Cabernet

Brothers Georges and Daniel Daou planted their estate on a steep Paso Robles mountainside — calcareous clay soils like Bordeaux's Right Bank, at some 2,200 feet — convinced it could grow Cabernet to rival the great estates. This bottling is where most drinkers meet them: Cabernet Sauvignon leading a Bordeaux-style blend, given time in French oak, and built in the ripe, polished Paso style that made DAOU a steakhouse staple. Compare it with the rest of our wine cellar, or browse the estate's range on the Daou vendor page.

Tasting Notes

Nose: Black cherry, cassis and plum with desert sage, sandalwood and dusty minerality. Palate: Rich and full — black raspberry, cherry preserve and currant with fig, black olive and baking spice. Finish: Fine-grained tannins into cherry, espresso and vanilla.

How to Enjoy

Give it 30 minutes of air, then pour it with seared or roasted meats and savory pasta — the pairings the winery itself points to — and serve just below room temperature.

Frequently Asked Questions

Is Daou Cabernet a single-varietal wine? It is Cabernet-led but blended in Bordeaux style — Petit Verdot and Merlot join the Cabernet Sauvignon, which gives it its dark colour, spice and structure.

Where is DAOU? In Paso Robles, California, where the Daou family's high-elevation estate sits on calcareous clay soils above the Adelaida District.

Is it oaked? Yes — it is aged in French oak, roughly half of it new, which shows up as the espresso, vanilla and sandalwood notes over the dark fruit.
