Austin Hope Paso Robles Cabernet Sauvignon is the flagship wine of Hope Family Wines — the bottle that made Paso Robles Cabernet famous. Sourced from five sub-AVAs of Paso Robles (Creston, Estrella, Adelaida, El Pomar, and Geneseo) and raised in a two-stage French oak program, it is 100% Cabernet Sauvignon from 100% sustainably farmed, SIP-Certified vineyards. Winemaker Austin Hope built this label on one idea: Paso Robles cabernet with Napa-level polish at a Paso price. It's available to order online at Del Mesa Liquor, San Diego, CA.

The Bottle That Put Paso on the Map

Before Austin Hope, few outside California took Paso Robles Cabernet seriously. The flagship Austin Hope Cabernet changed that — a dark, concentrated, oak-polished cabernet from estate and partner vineyards across five sub-AVAs, aged in a meticulous two-stage French oak regimen: individual lots rest more than eleven months in barrel, then the blended wine returns to mostly new French oak for three more months. The result is the house style in full: power with polish, dark fruit wrapped in vanilla and cocoa. The winery's sister labels — Treana, Liberty School, Quest, Troublemaker — orbit this bottle. Tasting Notes

Per the winery: deep inky purple; black cherry, blackberry, and currant layered over vanilla bean, mocha, and sweet tobacco; a full-bodied palate with firm but refined tannins; a long, spiced finish.

How to Enjoy

Decant 30–60 minutes before serving at 60–65°F. Pair with grilled ribeye, braised short ribs, or aged cheddar. Built to cellar for a decade-plus.
