Experience our fresh fruit, honey and herbal aromas with a subtle black oak smokiness. On the palate, taste a medley of melon, pineapple, grapefruit and mandarin balanced by the sweetness of cocoa with notes of mint and anise. Long velvety smooth finish of caramel with a tantalizing citrus bite.

At 8000 feet above sea level there is more sunshine, scarce water and less oxygen. This natural stress creates more intense flavors in the heart of the piña. That’s where we find our Tobala, a rare maguey that has been cultivated in the Sierra Madre Mountains for 14 years.
HANDCRAFTED ENSAMBLE
Our Maestro Mezcalero uses the same handcrafted techniques perfected over hundreds of years. He blends our Tobala with our 8 year old Espadin to create our small batch, artisanal Ensamble Mountain Mezcal.
TRIPLE DISTILLED PROCESS
Our high altitude palenques allow us to boil the fermented mash at a lower temperature, which prevents the burning away of our Ensamble’s intense flavors and aromatics and allows us to triple distill for a remarkably bright and flavorful mezcal.
