- 4 teaspoons of all-purpose flour
- 1/4 cup water
- 2 tablespoons minced fresh parsley

- Veal should be cooked in oil in a large nonstick skillet that has recently been cooking spray-coated over medium heat until no longer pink, about 2-3 minutes per side.
- Put the mushrooms, onion, and garlic in the skillet and heat for 5-8 minutes until the vegetables are tender. Stirring to dislodge browned bits from the pan, add wine.
- Stir this smooth flour mixture into the mushroom mixture. Bring to a boil; cook and stir for 2 minutes until thickened. Add parsley, salt, and pepper, and stir.

- 1 boneless beef chuck roast (2 pounds), cubed
- 3 tablespoons canola oil
- 1 pound sliced baby portobello mushrooms
- 5 medium carrots, chopped
- 1 large onion, chopped
- 3 garlic cloves, minced
- 3 teaspoons minced fresh rosemary or 1 teaspoon dried rosemary, crushed
- 2 tablespoons cornstarch
- 2 tablespoons cold water
Directions
- In a big pot, bring broth and dried mushrooms to a boil. Remove from flame and let mushrooms sit for 15 to 20 minutes or until they are softened.
- In a large sealable plastic bag, combine the flour, salt, and pepper; reserve 1 tablespoon for the sauce. The remaining flour mixture should be added to the steak, a few pieces at a time, and shaken to coat.
- In a Dutch oven, brown beef in oil in stages. Add the onion, carrots, and Portobello mushrooms and cook until the onion is tender. For one minute, cook the dehydrated mushrooms, garlic, and rosemary. The reserved flour mixture should be mixed in well before adding mushroom broth.
- When the meat is cooked, reduce heat, cover, and simmer for 1-1/2 to 2 hours. Stir gently into the pan after mixing cornstarch and water until smooth. For 2 minutes or until thickened, cook and stir after bringing to a boil. If preferred, serve over egg noodles and sprinkle blue cheese on top.
